Cherry tomato & bean loaded sweet potato

Ingredients

2 cloves garlic

1 tbsp olive oil

1/2 punnet cherry tomatoes (or 2 handfuls) - halved

1 can black beans

1 tsp miso paste

1 tsp chipotle

Dash white wine vinegar

Juice of 1/2 a lime

Method

Gently wok fry (on a low heat) all ingredients bar the black beans, lime and vinegar for around 10 - 15 mins until the tomatoes are softened. Add the drained black beans, lime juice and white wine vinegar - warm through for 2 more minutes and fill the baked sweet potato up to the brim. I added half an avocado. These flavours together are absolutely glorious - let me know if you try it!
