Rainbow Summer Salad

The deeper and more vibrant the colour, the richer the nutrient density. ⠀⠀

🥬Mixed salad leaves with grated beetroot (came as one in a salad bag from the supermarket)

🍎 Mixed coloured peppers

🥑 1/2 an avocado

🍆 Roasted aubergine (oven baked for 20 mins in a little coconut oil)

❤️ Handful pomegranate seeds

🌾 2-3 tbsps quinoa (simmered in stock for 20 mins)

🥚 2 boiled eggs (quartered)
